Typically, you see green beans cooked al dente (Italian for to the teeth, they still have a little crunch to them. And I hope I spelled that right) at nicer restaurants.

On the farm they are left to slow cook for a long time.

I prefer the latter. Guess I'm a redneck.

My uncle used to grow them. He'd cook them all day with lots of bacon and onion and black pepper. I made entire meals of long, slow cooked green beans. Nothing better as far as I'm concerned.

I haven't been to Strouds in the KC area in a long time. I went to the Wichita one every once and a while when I lived there and never had a problem.

I might be persuaded to wait 1.5 hours for a crack at their chicken noodle soup, though.

They don't get soggy, just softer...I can cook either way, depends on the mood and the time associated. If I buy fresh at the farmer's market, I cook them 48 hrs. in a crock pot...or I cook al dente with pepper and lemon. Most Southerners cook the hel1 out of them though.
