320GB HD
Blu-Ray Drive
Plenty fast for internet/email

Upgrading the hard drive will not speed up any computer. It only increases the space available for storing files.

Upgrading RAM (memory), on the other hand, can have an effect on speed, especially when running multiple applications.

(RAM is the electronic chip thingys, not the spinning disk thingys. )

I've never encountered a computer off the shelf that I thought had enough RAM in it.

The computer I'm looking at comes with this:

3GB DDR2-800MHz SDRAM [2 DIMMs]

or, for $70 more dollars, I can increase it to this:

4GB DDR2-800MHz SDRAM [2 DIMMs]

Other than McAfee anti-everything and Microsoft(R) Office Home and Student Edition 2007, there won't be a lot of software taking up space. Will the 3GB be enough RAM to keep the computer from running slowly?

Stay away from mcafee. It along with any other "Internet Security Suite" is crap bloatware. Just download and install Microsoft Security Essentials. Its free, lightweight and doesn't spam you with annoying pop-up messages that will only confuse your mother. As far as what machine to buy her, any pc nowadays is good enough for what she wants to do.
